The wild yeast ferment provides bready aromas and with dominant fragrances of peach, lime and green apple, it is rounded off with a subtle hint of orange peel. This wine has a vibrant fruit palate and a lasting finish.
Wild fermented Chenin Blanc is not a fast acting commercially selected yeast. It is crafted in a traditional way, fermented with wild yeast found naturally on the grapes. The Chenin Blanc grapes are harvested at optimum ripeness. The grapes were picked early in the morning, crushed, and pumped to drainers where the free run juice is drained to a settling tank. Juice is kept in settling tank for 24 hours under cooling and the clean juice is then racked to the fermenting tanks. No commercial yeast is used and a wild and spontaneous fermentation takes place. Fermentation temperature is between 15 and 18 degrease and is fermented until dry. The wine is then kept on fine lees for ageing before it is prepared for bottling.
